Mediatonic, the developer behind Fall Guys have said they would love to bring the game to Switch and Xbox down the lines. It seems they may in fact have plans for that.
Dataminer OatmealDome, found a “NintendoSDKPlugin.dll” file within the game’s files on Steam that has supposedly been present since the original version of the game.
Interestingly, Fall Guys has the "NintendoSDKPlugin.dll" file in its game files on Steam.
This means that the Fall Guys Unity project has support for the Nintendo Switch's SDK (not necessarily that it *will* come to Switch). It's also been there since the first version.

OatmealDome has also explained why this is not referring to the Switch Pro Controller, but rather to the Switch itself
NintendoSDK and its associated Unity plugin is only for developing Switch games. Nintendo doesn't provide any official SDK for the Pro Controller on PC
